(Serves 4)
For the Beef:
- 1 lb (450 g) flank steak or sirloin, thinly sliced against the grain
- 1 tbsp cornstarch
- 1 tbsp soy sauce
- 1 tbsp vegetable oil (for cooking)
For the Sauce:
- 1/4 cup soy sauce
- 1/4 cup beef broth (or water)
- 2 tbsp oyster sauce
- 1 tbsp brown sugar
- 1 tsp sesame oil
- 2 tsp cornstarch
For the Stir-Fry:
- 2 cups broccoli florets
- 3 cloves garlic, minced
- 1 tbsp ginger, minced (optional, for extra flavor)
- 1 tbsp vegetable oil
For Serving:
- Steamed rice or noodles
- Sesame seeds and sliced green onions (optional)
Instructions
1. Marinate the Beef:
- In a bowl, toss the sliced beef with 1 tbsp soy sauce and 1 tbsp cornstarch. Set aside for 10-15 minutes while preparing the other ingredients.
2. Make the Sauce:
- In a small bowl, whisk together soy sauce, beef broth, oyster sauce, brown sugar, sesame oil, and cornstarch. Set aside.
3. Cook the Broccoli:
- Heat 1 tbsp of vegetable oil in a large skillet or wok over medium-high heat.
- Add the broccoli florets and stir-fry for 3-4 minutes, until bright green and slightly tender. Remove from the skillet and set aside.
4. Sear the Beef:
- In the same skillet, heat another 1 tbsp of vegetable oil. Add the marinated beef in a single layer.
- Sear for 1-2 minutes per side until browned and just cooked through. Remove the beef and set aside.
5. Combine Everything:
- Reduce the heat to medium and add the garlic (and ginger, if using) to the skillet. Sauté for 30 seconds until fragrant.
- Pour the sauce into the skillet and stir until it begins to thicken, about 1 minute.
- Return the beef and broccoli to the skillet, tossing to coat in the sauce. Cook for 1-2 more minutes until heated through.
6. Serve:
- Serve the beef and broccoli over steamed rice or noodles.
- Garnish with sesame seeds and sliced green onions, if desired.
Notes
- Prep Ahead: Have all ingredients sliced and measured before starting, as stir-fries cook quickly.
- Tender Beef: Freeze the beef for 10-15 minutes before slicing for thin, even pieces.
- Vegetarian Option: Replace beef with tofu or mushrooms and use vegetable broth instead of beef broth.
