These Better Than Starbucks Egg Bites are fluffy, creamy, and packed with protein, perfect for busy mornings or a healthy snack. Made with eggs, cheese, and your favorite mix-ins, they’re easy to make in an oven, Instant Pot, or sous-vide for that signature silky texture!

Base Ingredients:
- 8 large eggs
- 1/2 cup cottage cheese (for a creamy texture!)
- 1/2 cup shredded cheese (cheddar, gruyère, or Swiss work great!)
- 1/4 cup heavy cream or milk
- 1/2 tsp salt
- 1/4 tsp black pepper
Optional Add-Ins: (Choose your favorites!)
- 1/2 cup cooked bacon or ham, crumbled
- 1/2 cup sautéed mushrooms, spinach, or bell peppers
- 1 tbsp chopped chives or green onions
- 1/4 tsp smoked paprika (for extra flavor!)
Instructions
Method 1: Oven-Baked (Easy & Accessible!)
- Preheat oven to 325°F (163°C).
- Grease a 12-cup muffin tin or use silicone muffin liners.
- Blend together eggs, cottage cheese, shredded cheese, cream, salt, and pepper until smooth. (A blender helps make them extra fluffy!)
- Pour the mixture evenly into each muffin cup, filling about ¾ full.
- Add your favorite mix-ins (bacon, veggies, etc.), gently stirring into each cup.
- Place the muffin tin in a water bath (fill a baking pan with hot water and place the muffin tin inside to steam).
- Bake for 25-30 minutes, or until the egg bites are set but still jiggly in the center.
- Let cool slightly before removing and serving.
Method 2: Instant Pot (Creamier & Faster!)
- Blend together eggs, cottage cheese, shredded cheese, cream, salt, and pepper until smooth.
- Grease a silicone egg bite mold and divide the mixture evenly.
- Add your mix-ins and gently stir.
- Cover the mold with foil and place it on a trivet inside the Instant Pot with 1 cup of water.
- Cook on “Steam” for 10 minutes, then let natural release for 5 minutes.
- Remove and let cool before serving.
Method 3: Sous-Vide (The Ultimate Starbucks Texture!)
- Preheat a sous-vide water bath to 170°F (77°C).
- Blend together eggs, cottage cheese, cheese, cream, salt, and pepper until smooth.
- Pour the mixture into small glass jars or silicone molds and add your mix-ins.
- Seal and submerge in the water bath for 45-60 minutes, until set.
- Let cool slightly before serving.
Serving & Storage
- Serve hot with a side of toast, avocado, or fresh greens.
- Store leftovers in an airtight container in the fridge for up to 5 days.
- Reheat in the microwave for 30-40 seconds or enjoy cold!
Notes
- Want them extra fluffy? Add ¼ tsp baking powder for extra rise!
- Dairy-Free? Swap cottage cheese & cream for unsweetened almond milk & nutritional yeast.
- Spicy Kick? Add a dash of hot sauce or diced jalapeños.
- More protein? Use egg whites only for a leaner version!
