- 4 large egg whites, room temperature
- 1 cup granulated sugar
- 1 teaspoon white vinegar
- 1 teaspoon cornstarch
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract (for whipped cream)
- 2 cups mixed fresh berries (strawberries, blueberries, raspberries, blackberries)
Instructions
- Preheat oven to 250°F (120°C). Line a baking sheet with parchment paper and draw a 7-inch circle as a guide.
- In a clean bowl, beat egg whites until soft peaks form.
- Gradually add sugar, one tablespoon at a time, beating until stiff, glossy peaks form and sugar is dissolved.
- Gently fold in vinegar, cornstarch, and vanilla.
- Spoon meringue onto the parchment, shaping it into a nest with slightly higher edges.
- Bake for 1 hour and 15 minutes, then turn off the oven and let the meringue cool inside with the door ajar.
- In a chilled bowl, whip cream, powdered sugar, and vanilla until soft peaks form.
- Top the cooled meringue with whipped cream and arrange fresh berries over the top.
- Serve immediately or chill for up to 2 hours before serving.
Notes
- Make sure bowl and beaters are grease-free to achieve proper meringue volume.
- Do not open the oven while baking to prevent collapsing.
- Top with mint leaves or a dusting of powdered sugar for presentation.
