- 3/4 cup whole milk
- 1 teaspoon Dijon mustard

- 1/4 teaspoon cayenne pepper (optional)
- 2 cups shredded sharp cheddar cheese
- Salt and pepper to taste
Instructions
- In a medium saucepan over medium heat, melt the butter.
- Whisk in the flour and cook for 1–2 minutes to form a roux.
- Slowly whisk in the beer and milk, stirring constantly until smooth and slightly thickened, about 3–4 minutes.
- Stir in Dijon mustard, garlic powder, and cayenne pepper if using.
- Reduce heat to low and add the shredded cheddar cheese a handful at a time, stirring until melted and smooth.
- Season with salt and pepper to taste.
- Serve warm with pretzels, chips, or vegetables.
