Description

Tender beef tips simmered in a savory, rich gravy—comfort food at its best, perfect served over mashed potatoes, rice, or egg noodles.


Ingredients

  • 2 lbs (≈900 g) beef tenderloin tips or stew meat
  • 2 tbsp olive oil or butter
  • 1 large onion, sliced
  • 2 garlic cloves, minced
  • 2 tbsp all-purpose flour
  • 1 cup (240 ml) beef broth
  • 1 cup (240 ml) red wine or extra beef broth
  • 1 tsp Worcestershire sauce
  • 1 tsp Dijon mustard (optional)
  • 1 tsp fresh thyme leaves (or 1/2 tsp dried)
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp butter (to finish)
  • Optional: chopped parsley for garnish

Instructions

  1. Pat beef tips dry and season with salt and pepper.
  2. Heat oil or butter in a large skillet or Dutch oven over medium-high heat.
  3. Sear beef in batches until browned all over, about 3–4 minutes per batch. Remove and set aside.
  4. Reduce heat to medium; add onion and sauté until softened, about 5 minutes. Add garlic and cook 30 seconds until fragrant.
  5. Sprinkle flour over onions and stir to cook for 1 minute. It should become lightly golden.
  6. Gradually whisk in beef broth and red wine, scraping browned bits from the bottom.
  7. Stir in Worcestershire, Dijon (if using), and thyme.
  8. Return beef tips and any collected juices to the pan. Bring to a simmer, then reduce heat to low, cover, and cook for 15–20 minutes until beef is tender.
  9. Uncover, stir in butter until melted and the gravy thickens. Taste and adjust seasoning.
  10. Garnish with parsley if desired. Serve hot over mashed potatoes, rice, or noodles.

Notes

  • Use flour dredge instead of sprinkling for a thicker gravy.
  • Substitute mushrooms for onion if preferred.
  • Low-sodium broth helps control salt level.
  • For a slow-cooker version, sear meat and onions, then transfer to slow cooker with liquids and cook on Low for 6–7 hours.
