Description

Hearty flour tortillas filled with seasoned beef, beans, cheese, and fresh toppings—a satisfying meal perfect for dinner or lunch.


Ingredients

  • 1 lb (450 g) ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet (1 oz/28 g) taco seasoning (or homemade mix)
  • 1/2 cup water
  • 1 cup canned black or pinto beans, drained and rinsed
  • 46 large flour tortillas (8-10″)
  • 1 cup shredded cheddar or Mexican blend cheese
  • Optional toppings: diced tomato, shredded lettuce, sour cream, salsa, chopped cilantro, sliced avocado or guacamole

Instructions

  1. Heat a skillet over medium heat and cook the onion until softened, about 3 minutes.
  2. Add garlic and cook 30 seconds until fragrant.
  3. Add ground beef; break up with a spoon and cook until browned and no pink remains, about 5–7 minutes. Drain excess fat if needed.
  4. Stir in taco seasoning and water; simmer for 2–3 minutes until sauce thickens.
  5. Mix in beans and warm through, about 1–2 minutes. Taste and adjust seasoning.
  6. Warm tortillas in skillet or microwave until pliable.
  7. Assemble burritos: place ⅙ of beef–bean mixture down center of tortilla, sprinkle with cheese and add desired toppings.
  8. Fold in sides, then roll up tightly from bottom to form a burrito.
  9. Repeat with remaining tortillas and filling.
  10. Optional: heat a dry skillet over medium and toast burritos seam-side down for 1–2 minutes per side until golden and cheese melts.
  11. Serve immediately with extra salsa, sour cream, and avocado on the side.

Notes

  • Make it lighter: use lean ground beef or ground turkey.
  • Add rice, corn, or veggies like bell peppers or zucchini for more volume.
  • For meal prep, wrap tightly in foil or parchment and refrigerate up to 3 days, or freeze for up to 2 months.
  • Reheat frozen burritos in oven (350 °F/175 °C for 20 mins) or microwave wrapped in damp paper towel until hot.
  • Turn into burrito bowls by skipping the tortilla and serving in a bowl over rice or greens.
