Scale
- 1 lb (450 g) ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet (1 oz/28 g) taco seasoning (or homemade mix)
- 1/2 cup water
- 1 cup canned black or pinto beans, drained and rinsed
- 4–6 large flour tortillas (8-10″)
- 1 cup shredded cheddar or Mexican blend cheese
- Optional toppings: diced tomato, shredded lettuce, sour cream, salsa, chopped cilantro, sliced avocado or guacamole
Instructions
- Heat a skillet over medium heat and cook the onion until softened, about 3 minutes.
- Add garlic and cook 30 seconds until fragrant.
- Add ground beef; break up with a spoon and cook until browned and no pink remains, about 5–7 minutes. Drain excess fat if needed.
- Stir in taco seasoning and water; simmer for 2–3 minutes until sauce thickens.
- Mix in beans and warm through, about 1–2 minutes. Taste and adjust seasoning.
- Warm tortillas in skillet or microwave until pliable.
- Assemble burritos: place ⅙ of beef–bean mixture down center of tortilla, sprinkle with cheese and add desired toppings.
- Fold in sides, then roll up tightly from bottom to form a burrito.
- Repeat with remaining tortillas and filling.
- Optional: heat a dry skillet over medium and toast burritos seam-side down for 1–2 minutes per side until golden and cheese melts.
- Serve immediately with extra salsa, sour cream, and avocado on the side.
Notes
- Make it lighter: use lean ground beef or ground turkey.
- Add rice, corn, or veggies like bell peppers or zucchini for more volume.
- For meal prep, wrap tightly in foil or parchment and refrigerate up to 3 days, or freeze for up to 2 months.
- Reheat frozen burritos in oven (350 °F/175 °C for 20 mins) or microwave wrapped in damp paper towel until hot.
- Turn into burrito bowls by skipping the tortilla and serving in a bowl over rice or greens.
