Description

These BBQ Pineapple Chicken Kabobs are a perfect mix of sweet and smoky! Juicy chunks of chicken are marinated in barbecue sauce, skewered with pineapple, bell peppers, and red onion, then grilled to perfection. It’s an easy, colorful, and flavor-packed dish that’s great for cookouts, family dinners, or meal prep.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts (or thighs), cut into 1.5-inch pieces

  • 1 1/2 cups pineapple chunks (fresh or canned, drained if using canned)

  • 1 red bell pepper, cut into 1.5-inch pieces

  • 1 green bell pepper, cut into 1.5-inch pieces

  • 1 red onion, cut into chunks

  • 1 1/4 cups barbecue sauce (plus extra for brushing)

  • 2 tbsp olive oil

  • 1 tbsp soy sauce (optional, for added flavor)

  • Salt and pepper, to taste

  • Wooden or metal skewers


Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

  2. In a bowl or zip-top bag, combine chicken pieces, 1 cup barbecue sauce, olive oil, soy sauce (if using), salt, and pepper. Marinate in the fridge for at least 30 minutes (up to 2 hours for more flavor).

  3. Preheat grill to medium-high heat (about 400°F).

  4. Thread chicken, pineapple, bell peppers, and red onion onto skewers, alternating pieces for variety.

  5. Grill kabobs for 10–12 minutes, turning occasionally, until chicken is fully cooked and slightly charred.

  6. During the last few minutes of grilling, brush kabobs with the remaining 1/4 cup of barbecue sauce.

  7. Remove from grill and serve hot!

 



Notes

  • Want extra caramelization? Use a sweeter BBQ sauce or brush with a mix of BBQ sauce and honey.

  • These work great in the oven too—just bake at 425°F for 20–25 minutes, flipping halfway through.

  • Serve over rice, with a salad, or wrapped in warm tortillas.
