- 2 cups cooked shredded chicken
- 1/2 cup barbecue sauce
- 8 small corn tortillas
- 1 tbsp olive oil
- 1 1/2 cups shredded cheddar or Mexican blend cheese
- 1/2 cup canned black beans, drained and rinsed (optional)
- 1/2 red onion, thinly sliced
- 1 avocado, diced
- 1/4 cup chopped fresh cilantro
- 1/4 cup sour cream or Greek yogurt (optional)
- Lime wedges for serving
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Brush both sides of each tortilla with olive oil and place on the baking sheet. Bake for 5–7 minutes per side until golden and crispy. Set aside.
- In a bowl, mix shredded chicken with barbecue sauce until well coated.
- Top each crisped tortilla with a layer of BBQ chicken, black beans if using, and shredded cheese.
- Return to the oven and bake for 5–7 minutes, or until the cheese is melted and bubbly.
- Top with red onion, avocado, cilantro, and a dollop of sour cream if desired.
- Serve warm with lime wedges on the side.

- Use rotisserie chicken for a fast shortcut.
- Try different cheeses like Monterey Jack or pepper jack for added flavor.
- For extra crunch, broil for the last 1–2 minutes after adding toppings.
