Description

BBQ Chicken Tostadas are crispy, flavorful, and topped with shredded BBQ chicken, melted cheese, and fresh toppings. A fun and easy dinner or party dish packed with smoky, tangy flavor.


Ingredients

  • 2 cups cooked shredded chicken
  • 1/2 cup barbecue sauce
  • 8 small corn tortillas
  • 1 tbsp olive oil
  • 1 1/2 cups shredded cheddar or Mexican blend cheese
  • 1/2 cup canned black beans, drained and rinsed (optional)
  • 1/2 red onion, thinly sliced
  • 1 avocado, diced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sour cream or Greek yogurt (optional)
  • Lime wedges for serving

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Brush both sides of each tortilla with olive oil and place on the baking sheet. Bake for 5–7 minutes per side until golden and crispy. Set aside.
  3. In a bowl, mix shredded chicken with barbecue sauce until well coated.
  4. Top each crisped tortilla with a layer of BBQ chicken, black beans if using, and shredded cheese.
  5. Return to the oven and bake for 5–7 minutes, or until the cheese is melted and bubbly.
  6. Top with red onion, avocado, cilantro, and a dollop of sour cream if desired.
  7. Serve warm with lime wedges on the side.

  • Use rotisserie chicken for a fast shortcut.
  • Try different cheeses like Monterey Jack or pepper jack for added flavor.
  • For extra crunch, broil for the last 1–2 minutes after adding toppings.
