- 2 cups cooked chicken, shredded
- 1/2 cup BBQ sauce
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 1/4 cup red onion, thinly sliced
- 1 tbsp chopped fresh cilantro (optional)
- 4 large flour tortillas
- 1 tbsp butter or oil, for cooking
Instructions
- In a bowl, mix the shredded chicken with BBQ sauce until evenly coated.
- Heat a skillet over medium heat and lightly grease with butter or oil.
- Place one tortilla in the skillet and sprinkle half with a mix of mozzarella and cheddar cheese.
- Add a layer of BBQ chicken, red onion slices, and cilantro (if using), then top with more cheese.
- Fold the tortilla in half and cook for 2-3 minutes per side, or until golden brown and cheese is melted.
- Repeat with remaining tortillas and filling.
- Slice into wedges and serve warm, optionally with sour cream or extra BBQ sauce for dipping.
