Ingredients
For the BBQ Cauliflower Bites:
-
1 medium head cauliflower, cut into bite-sized florets
-
3/4 cup all-purpose flour (or gluten-free flour)
-
3/4 cup unsweetened plant-based milk
-
1 tsp garlic powder
-
1/2 tsp paprika
-
Salt and pepper, to taste
-
1/2 cup BBQ sauce (plus more for drizzling)
For the Bowls:
-
2 cups cooked rice or quinoa
-
1 cup shredded red cabbage
-
1 cup cherry tomatoes, halved
-
1 avocado, sliced
-
1/4 cup chopped green onions or cilantro
-
Lime wedges, for serving
Instructions
-
Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
-
In a bowl, whisk together the flour, plant milk, garlic powder, paprika, salt, and pepper to form a smooth batter.
-
Dip each cauliflower floret into the batter, shake off the excess, and place on the baking sheet.
-
Bake for 20 minutes, then remove from the oven and toss the cauliflower in BBQ sauce. Return to the oven and bake for another 10–15 minutes until crispy and sticky.
-
While cauliflower bakes, prep your bowl ingredients: cook rice or quinoa, slice avocado, chop veggies, and get toppings ready.
-
Assemble the bowls by adding a base of rice or quinoa, then top with BBQ cauliflower bites, cabbage, tomatoes, avocado, and green onions or cilantro.
-
Drizzle with extra BBQ sauce and a squeeze of lime. Serve warm!
Notes
-
You can use store-bought or homemade BBQ sauce—smoky, sweet, or spicy, it’s your call.
-
Make it a wrap or taco instead of a bowl for a fun variation.
-
Add vegan ranch or tahini drizzle for extra creaminess.
-
Great for meal prep—store components separately and assemble when ready to eat.
