Description

These BBQ Beer-Marinated Chicken Skewers are juicy, smoky, and full of flavor thanks to a simple beer-based marinade. Perfect for grilling, these skewers make a fun and easy main dish for cookouts, tailgates, or casual weeknight dinners. Serve them with corn on the cob, coleslaw, or over rice!


Ingredients

For the marinade:

  • 1 cup beer (lager or ale works best)

  • 1/4 cup BBQ sauce (your favorite kind)

  • 2 tablespoons olive oil

  • 2 tablespoons soy sauce

  • 1 tablespoon brown sugar

  • 2 cloves garlic, minced

  • 1 teaspoon smoked paprika

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

For the skewers:

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1.5-inch pieces

  • Wooden or metal skewers

  • Extra BBQ sauce for basting (optional)

  • Chopped parsley or green onion, for garnish (optional)

 



Instructions

  • Make the marinade: In a medium bowl, whisk together the beer, BBQ sauce, olive oil, soy sauce, brown sugar, garlic, smoked paprika, onion powder, salt, and pepper.

  • Marinate the chicken: Place the chicken pieces in a large zip-top bag or bowl. Pour the marinade over the chicken, seal or cover, and refrigerate for at least 2 hours (up to 8 hours for more flavor).

  • Soak wooden skewers: If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning.

  • Assemble the skewers: Remove chicken from the marinade and thread onto skewers. Discard used marinade.

  • Grill the chicken:

    • Preheat grill to medium-high heat (about 400°F).

    • Grill skewers for 10–12 minutes, turning every few minutes, until chicken is cooked through and lightly charred.

    • During the last few minutes, brush with extra BBQ sauce if desired.

 

  • Serve: Remove from grill, garnish with chopped parsley or green onions, and serve hot!


Notes

  • You can prep the skewers ahead of time and keep them in the fridge until ready to grill.

  • These work great with other proteins too—try shrimp or tofu for a twist!

  • Serve with grilled veggies or over rice for a full meal.
