These BBQ Beer-Marinated Chicken Skewers are juicy, smoky, and full of flavor thanks to a simple beer-based marinade. Perfect for grilling, these skewers make a fun and easy main dish for cookouts, tailgates, or casual weeknight dinners. Serve them with corn on the cob, coleslaw, or over rice!
Ingredients
For the marinade:

1 cup beer (lager or ale works best)

1/4 cup BBQ sauce (your favorite kind)

2 tablespoons soy sauce

1 tablespoon brown sugar

2 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon onion powder

1/2 teaspoon salt

For the skewers:

1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1.5-inch pieces

Wooden or metal skewers

Extra BBQ sauce for basting (optional)

Chopped parsley or green onion, for garnish (optional)
Instructions

Make the marinade: In a medium bowl, whisk together the beer, BBQ sauce, olive oil, soy sauce, brown sugar, garlic, smoked paprika, onion powder, salt, and pepper.

Marinate the chicken: Place the chicken pieces in a large zip-top bag or bowl. Pour the marinade over the chicken, seal or cover, and refrigerate for at least 2 hours (up to 8 hours for more flavor).

Soak wooden skewers: If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning.

Assemble the skewers: Remove chicken from the marinade and thread onto skewers. Discard used marinade.

Grill the chicken:

Preheat grill to medium-high heat (about 400°F).

Grill skewers for 10–12 minutes, turning every few minutes, until chicken is cooked through and lightly charred.

During the last few minutes, brush with extra BBQ sauce if desired.

Serve: Remove from grill, garnish with chopped parsley or green onions, and serve hot!
