Description

These Cauliflower Fritters are crispy on the outside, tender on the inside, and packed with flavor! Made with simple ingredients, they’re a perfect appetizer, snack, or side dish. Serve them with a dipping sauce for an extra tasty treat!


Ingredients

  • 1 small head of cauliflower (about 3 cups, finely chopped)
  • 2 large eggs
  • 1/2 cup all-purpose flour (or almond flour for gluten-free)
  • 1/2 cup shredded cheese (cheddar or Parmesan)
  • 2 green onions, finely chopped
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp paprika (optional)

 

  • 2 tbsp olive oil (for frying)

Instructions

  1. Prepare the cauliflower:

    • Steam or microwave cauliflower until tender (about 5 minutes).
    • Let it cool, then finely chop or mash it with a fork.
  2. Make the batter:

    • In a bowl, whisk the eggs. Add flour, cheese, green onions, garlic, salt, pepper, and paprika.
    • Stir in the mashed cauliflower and mix until well combined.
  3. Cook the fritters:

    • Heat olive oil in a skillet over medium heat.
    • Scoop about 2 tablespoons of batter for each fritter, flatten slightly, and cook for 3-4 minutes per side, until golden brown and crispy.
  4. Serve:

    • Drain on paper towels and serve warm with sour cream, yogurt, or your favorite dipping sauce.

Notes

  • Make it low-carb: Use almond flour instead of all-purpose flour.
  • Add extra veggies: Mix in grated zucchini or carrots for added nutrition.
