For the Salmon Bites:
- 1 lb salmon fillet, skin removed and cut into 1-inch cubes
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- Vegetable oil (for frying)

For the Bang Bang Sauce:
- 1/4 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha (adjust to taste)
- 1 teaspoon honey or sugar

Prepare the Sauce:
- In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and honey until smooth. Set aside.

Season the Salmon:
- Pat the salmon cubes dry with a paper towel. Season them with garlic powder, smoked paprika, salt, and pepper.

Bread the Salmon:
- Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.
- Dip each salmon cube into the flour, then the beaten eggs, and finally the panko breadcrumbs, pressing gently to adhere.

Cook the Salmon:
- Heat about 1 inch of vegetable oil in a skillet over medium heat. Once hot, fry the salmon bites in batches for 2–3 minutes per side, or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.

Toss with Sauce:
- Gently toss the cooked salmon bites in the prepared Bang Bang Sauce or drizzle the sauce over the top.

- Serve immediately with additional sauce on the side for dipping. Garnish with chopped green onions, sesame seeds, or a sprinkle of red pepper flakes if desired.
Notes
- For a lighter version, bake the breaded salmon bites at 400°F (200°C) for 15–20 minutes, flipping halfway through, or air-fry at 375°F (190°C) for 10–12 minutes.
- Adjust the spiciness by adding more or less sriracha to the sauce.
- These salmon bites are great as an appetizer or served over rice with steamed vegetables for a complete meal.
