A decadent twist on classic banana pudding, this Banana’s Foster Banana Pudding features layers of creamy vanilla pudding, caramelized bananas in a buttery rum sauce, and crunchy vanilla wafers for a rich and indulgent dessert.

- 4 ripe bananas, sliced
- 3 tablespoons unsalted butter
- 1/2 cup brown sugar
- 1/4 teaspoon cinnamon
- 2 tablespoons dark rum (optional)
- 1 (3.4 oz) package instant vanilla pudding mix
- 2 cups cold milk
- 1 (14 oz) can sweetened condensed milk
- 1 1/2 cups heavy cream
- 1 teaspoon vanilla extract
- 1 box vanilla wafer cookies
- Whipped cream, for topping (optional)
Instructions
- In a large skillet over medium heat, melt butter and stir in brown sugar and cinnamon until bubbly.
- Add banana slices and cook for 2-3 minutes, gently stirring until caramelized. Stir in rum and cook for 1 more minute. Remove from heat and let cool.
- In a mixing bowl, whisk together instant pudding mix and cold milk for 2 minutes until thickened. Add sweetened condensed milk and vanilla extract, mixing until smooth.
- In a separate bowl, whip heavy cream until stiff peaks form, then gently fold into the pudding mixture.
- In a trifle dish or 9×13-inch pan, layer vanilla wafers, caramelized bananas, and pudding mixture. Repeat layers until ingredients are used up, ending with pudding.
- Chill in the refrigerator for at least 4 hours or overnight.
- Top with whipped cream and extra banana slices or crumbled wafers before serving, if desired.
Notes
- Omit rum or use rum extract for a non-alcoholic version.
- Use fresh bananas that are ripe but not overly soft for best texture.
- Make a day ahead for better flavor melding and easier serving.
- Use store-bought whipped topping if you’re short on time.
