- 2 ripe bananas, mashed
- 2 cups rolled oats
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1 1/4 cups milk (dairy or plant-based)
- 1 egg (or flax egg for vegan)
- 1/4 cup maple syrup or honey
- 1 tsp vanilla extract
- 1/2 cup chopped walnuts or pecans
- 1/4 cup chocolate chips (optional, for extra sweetness)
Instructions
1. Preheat & Prep
- Preheat oven to 375°F (190°C).
- Grease an 8×8-inch baking dish or line it with parchment paper.
2. Mix the Ingredients
- In a large bowl, mash the bananas.
- Stir in the oats, baking powder, cinnamon, and salt.
- Add milk, egg, maple syrup, and vanilla, mixing well.
- Fold in chopped nuts and chocolate chips (if using).
3. Bake
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 30 minutes, until the top is golden and set.
4. Serve & Enjoy
- Let cool for 5 minutes before slicing.
- Serve warm or at room temperature, topped with yogurt, nut butter, or extra banana slices!
Notes
- Make it vegan: Use a flax egg (1 tbsp ground flax + 3 tbsp water) and dairy-free milk.
