Ingredients

Units Scale

For the Crust:

  • 2 cups (200 g) vanilla wafer crumbs (or graham crackers)
  • 1/4 cup (50 g) granulated sugar
  • 1/2 cup (115 g) unsalted butter, melted

For the Banana Cheesecake Filling:

  • 3 (8 oz each) blocks of cream cheese, softened
  • 3/4 cup (150 g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 ripe bananas, mashed (~3/4 cup)
  • 1/4 cup (60 ml) sour cream
  • 2 tablespoons all-purpose flour

For the Banana Cream Topping:

  • 1 cup (240 ml) heavy whipping cream
  • 1/4 cup (30 g) powdered sugar
  • 1 teaspoon vanilla extract
  • 1 banana, sliced (for garnish)
  • Crushed vanilla wafers (optional, for garnish)

Instructions

1️⃣ Prepare the Crust

  1. Preheat oven to 325°F (163°C).
  2. In a bowl, mix vanilla wafer crumbs, sugar, and melted butter.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan.
  4. Bake for 10 minutes, then set aside to cool.

2️⃣ Make the Cheesecake Filling

  1. In a large bowl, beat cream cheese and sugar until smooth.
  2. Add eggs, one at a time, mixing well after each.
  3. Stir in vanilla, mashed bananas, sour cream, and flour until combined.
  4. Pour the filling over the crust.

3️⃣ Bake the Cheesecake

  1. Wrap the bottom of the pan in foil and place it in a larger pan with 1 inch of hot water (water bath method for a crack-free cheesecake).
  2. Bake for 50-55 minutes, until the center is just slightly jiggly.
  3. Turn off the oven and let the cheesecake cool inside for 1 hour.
  4. Chill in the fridge for at least 4 hours or overnight.

4️⃣ Make the Banana Cream Topping

  1. Beat heavy cream, powdered sugar, and vanilla until stiff peaks form.
  2. Spread over the chilled cheesecake.

5️⃣ Garnish & Serve

  • Top with banana slices and crushed vanilla wafers.
  • Slice and enjoy!
