Ingredients

Units Scale
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 3 ripe bananas, mashed
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon (optional)
  • 1/4 cup chopped nuts or mini chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a mini muffin tin or line with mini muffin liners.
  2. In a medium bowl, whisk together flour, baking soda, salt, and cinnamon (if using).
  3. In a large bowl, combine mashed bananas, granulated sugar, brown sugar, egg, oil, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Fold in nuts or chocolate chips if using.
  6. Spoon the batter into the prepared mini muffin tin, filling each cup about 3/4 full.
  7. Bake for 12–15 minutes or until a toothpick inserted into the center comes out clean.
  8. Let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Use very ripe bananas for the best flavor and natural sweetness.
  • These muffins freeze well and can be reheated for a quick snack.
  • Adjust sugar to taste or substitute with honey or maple syrup.
  • Add-ins like blueberries or shredded coconut can add variety.
