Description

Ingredients

  • 2 large eggs
  • 1 cup panko breadcrumbs

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray or olive oil for baking

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly grease with cooking spray or olive oil.
  2. Set up a dredging station with three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of panko, Parmesan, garlic powder, Italian seasoning, salt, and pepper.
  3. Dip each zucchini fry first in the flour, then the egg, and finally coat in the breadcrumb mixture.
  4. Place the coated zucchini fries on the prepared baking sheet in a single layer.
  5. Lightly spray the tops with cooking spray or drizzle with a little olive oil for extra crispiness.
  6. Bake for 20–25 minutes, flipping halfway through, until golden and crispy.
