Description

This Baked Stuffed Shrimp Casserole is a rich and flavorful seafood dish featuring jumbo shrimp topped with a buttery, seasoned breadcrumb stuffing. Baked to perfection, this dish is ideal for holidays, date nights, or any special occasion!

For the Shrimp:

  • 1 1/2 lbs jumbo shrimp, peeled and deveined (tails on)
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp Old Bay seasoning (optional)

For the Stuffing:

  • 1 cup panko breadcrumbs
  • 1/2 cup Ritz cracker crumbs (or more panko)
  • 4 tbsp unsalted butter, melted
  • 2 cloves garlic, minced
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped onion
  • 2 tbsp fresh parsley, chopped
  • 1/2 tsp paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp lemon zest
  • 2 tbsp fresh lemon juice
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup mayonnaise (for extra moisture)
  • 1/4 cup seafood stock or white wine (optional, for flavor)

For Garnish:

  • Lemon wedges
  • Chopped parsley

Instructions

Step 1: Prepare the Shrimp

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Butterfly the shrimp by slicing along the back without cutting all the way through. Lay them flat in the baking dish, tails up.
  3. Drizzle with olive oil, and season with salt, pepper, and Old Bay.

Step 2: Make the Stuffing

  1. In a bowl, mix panko breadcrumbs, cracker crumbs, melted butter, garlic, celery, onion, parsley, paprika, oregano, lemon zest, and Parmesan cheese.
  2. Stir in lemon juice, mayonnaise, and seafood stock (or white wine) until well combined.

Step 3: Assemble & Bake

  1. Spoon stuffing mixture onto each shrimp, pressing gently to help it stick.
  2. Sprinkle with extra Parmesan and breadcrumbs for added crunch.
  3. Bake for 20-25 minutes, until the shrimp is pink and opaque, and the stuffing is golden brown.

Step 4: Serve & Enjoy

  1. Garnish with chopped parsley and serve with lemon wedges.
  2. Enjoy with rice, a fresh salad, or garlic butter pasta!

Notes

  • Make It Spicier: Add ¼ tsp cayenne pepper or a drizzle of hot sauce.
  • No Mayo? Use Greek yogurt or extra melted butter.
