Instructions
Step 1: Prepare the Shrimp
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Butterfly the shrimp by slicing along the back without cutting all the way through. Lay them flat in the baking dish, tails up.
- Drizzle with olive oil, and season with salt, pepper, and Old Bay.
Step 2: Make the Stuffing
- In a bowl, mix panko breadcrumbs, cracker crumbs, melted butter, garlic, celery, onion, parsley, paprika, oregano, lemon zest, and Parmesan cheese.
- Stir in lemon juice, mayonnaise, and seafood stock (or white wine) until well combined.
Step 3: Assemble & Bake
- Spoon stuffing mixture onto each shrimp, pressing gently to help it stick.
- Sprinkle with extra Parmesan and breadcrumbs for added crunch.
- Bake for 20-25 minutes, until the shrimp is pink and opaque, and the stuffing is golden brown.
Step 4: Serve & Enjoy
- Garnish with chopped parsley and serve with lemon wedges.
- Enjoy with rice, a fresh salad, or garlic butter pasta!
