- 1/2 tsp onion powder
For the Avocado Sauce:
- 1 ripe avocado
- 1/4 cup Greek yogurt (or mayonnaise for dairy-free)
- 2 tbsp lime juice
- 1 clove garlic, minced
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 tbsp water (adjust for consistency)
For Garnish & Serving:
- Fresh cilantro or parsley
- Lemon wedges
- Cooked quinoa, rice, or salad
Instructions
Step 1: Preheat & Prepare
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
Step 2: Make the Salmon Meatballs
- In a large bowl, combine chopped salmon, panko, egg, parsley, Dijon mustard, lemon juice, garlic, salt, black pepper, smoked paprika, and onion powder.
- Mix until well combined, then shape into 1-inch meatballs (about 12-14 meatballs).
- Arrange meatballs on the prepared baking sheet.
Step 3: Bake the Meatballs
- Bake for 12-15 minutes, until the meatballs are firm and lightly golden.
Step 4: Make the Avocado Sauce
- In a blender or food processor, combine avocado, Greek yogurt, lime juice, garlic, salt, black pepper, and water. Blend until smooth and creamy.
