Ingredients

Units Scale

For the Salmon & Asparagus:

  • 4 salmon fillets (6 oz each)
  • 1 lb asparagus, trimmed
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika (optional)
  • 1 lemon, sliced

For the Garlic Butter Sauce:

  • 1/4 cup unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp honey (optional, for balance)
  • 1 tbsp fresh parsley, chopped
  • 1/2 tsp red pepper flakes (optional, for heat)

Instructions

Step 1: Preheat & Prepare the Foil Packets

  1. Preheat oven to 400°F (200°C).
  2. Cut 4 large sheets of aluminum foil, about 12 inches each.
  3. Place a salmon fillet in the center of each foil sheet and arrange asparagus spears around it.

Step 2: Make the Garlic Butter Sauce

  1. In a small bowl, mix melted butter, garlic, lemon juice, Dijon mustard, honey, parsley, and red pepper flakes.

Step 3: Assemble the Foil Packets

  1. Drizzle olive oil over the salmon and asparagus, then season with salt, black pepper, and smoked paprika.
  2. Spoon garlic butter sauce evenly over each fillet.
  3. Top with lemon slices.

Step 4: Bake the Salmon

  1. Fold the foil over the salmon, sealing the edges tightly to create a packet.
  2. Place foil packets on a baking sheet and bake for 15–18 minutes, until salmon is flaky and cooked through (internal temp 145°F).
  3. Carefully open the foil packets, allowing steam to escape.

Step 5: Serve & Enjoy

  1. Garnish with extra parsley and serve with rice, quinoa, or roasted potatoes.

Notes

  • Grill Option: Cook foil packets on a preheated grill at medium heat for 12–15 minutes.
  • Extra Crispy: Broil salmon for 2 minutes after baking for a slightly crisp top.
  • Storage: Refrigerate leftovers in an airtight container for up to 3 days.
  • Veggie Swaps: Use broccoli, zucchini, or green beans instead of asparagus.
