Ingredients

Scale

For the Pork Chops:

  • 4 bone-in or boneless pork chops (about 1-inch thick)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

For the Rice:

  • 1 cup long-grain white rice (uncooked)
  • 1 can (10.5 oz / 300 g) cream of mushroom soup (or cream of chicken soup)
  • 1 3/4 cups (420 ml) chicken broth (or water)
  • 1/2 cup diced onion
  • 1/2 cup diced bell peppers (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon butter (optional, for extra flavor)

Instructions

🥘 Prepare the Pork Chops:

  1. Preheat Oven:

    • Preheat your oven to 350°F (175°C).
  2. Season the Pork Chops:

    • In a small bowl, mix garlic powder, onion powder, smoked paprika, Italian seasoning, salt, and black pepper.
    • Rub the seasoning mix evenly over both sides of the pork chops.
  3. Sear the Pork Chops (Optional):

    • Heat olive oil in a large skillet over medium-high heat.
    • Sear the pork chops for 2-3 minutes per side until golden brown.
    • Remove from the skillet and set aside.

🍚 Prepare the Rice:

  1. Mix the Rice Ingredients:

    • In a large baking dish (9×13 inch / 23×33 cm), combine rice, cream of mushroom soup, chicken broth, diced onions, bell peppers, garlic powder, onion powder, salt, and black pepper.
    • Stir until well mixed.
  2. Add Butter (Optional):

    • Dot the rice mixture with small pieces of butter for extra richness.

🍲 Assemble and Bake:

  1. Add Pork Chops:

    • Place the seasoned pork chops on top of the rice mixture.
    • Cover the baking dish tightly with aluminum foil.
  2. Bake:

    • Bake for 45-50 minutes, until the rice is tender and the pork chops are cooked through (internal temperature of 145°F / 63°C).
  3. Optional Broil:

    • For a golden finish, remove the foil and broil for 2-3 minutes, watching closely to avoid burning.

🍽️ Serve:

  1. Fluff the Rice:

    • Use a fork to fluff the rice, mixing in any excess juices from the pork chops.
  2. Garnish:

    • Garnish with fresh parsley or a squeeze of lemon juice if desired.
  3. Serving Suggestions:

    • Pair with steamed vegetables, a fresh green salad, or a slice of crusty bread.

Notes

  • For Extra Flavor: Add a splash of soy sauce or Worcestershire sauce to the rice mixture.
  • Make It Creamy: Mix in 1/4 cup of sour cream or heavy cream to the rice for added creaminess.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.
