- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1/2 cup grated Parmesan cheese
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions

Preheat the Oven:
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

Prepare the Potatoes:
- Place the cut potatoes in a large bowl and cover with cold water. Soak for at least 30 minutes (this removes starch for extra crispy fries).
- Drain and pat the fries completely dry with paper towels.

- In a clean bowl, toss the potatoes with olive oil, garlic, salt, pepper, and oregano until evenly coated.

- Spread the fries in a single layer on the prepared baking sheet, making sure they don’t overlap. Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.

- Remove the fries from the oven and sprinkle with Parmesan cheese. Toss gently on the baking sheet to coat.
