Description

Baked Fried Rice is an easy, hands-off twist on classic fried rice. It’s made in the oven with rice, vegetables, soy sauce, and eggs for a flavorful side dish with less mess and no stovetop babysitting.

Ingredients

Units Scale
  • 2 cups uncooked jasmine or long-grain white rice
  • 3 cups chicken or vegetable broth
  • 1 cup frozen peas and carrots
  • 1/2 cup diced onion
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 eggs, lightly beaten
  • 2 green onions, sliced
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In the baking dish, combine uncooked rice, broth, peas and carrots, diced onion, soy sauce, and sesame oil. Stir well.
  3. Cover tightly with aluminum foil and bake for 35–40 minutes, or until rice is cooked and liquid is absorbed.
  4. Remove from oven, create a well in the center, pour in the beaten eggs, and stir gently to distribute. Cover and bake for another 5–7 minutes until eggs are cooked through.
  5. Fluff rice with a fork and stir in sliced green onions. Season with salt and pepper to taste.
  6. Serve warm as a side or add cooked chicken, shrimp, or tofu to make it a meal.

Notes

  • Use leftover rice for a faster version — reduce baking time and just bake until heated through.
  • Add extra veggies like corn, bell peppers, or edamame for variety.
  • Top with sriracha or drizzle with extra soy sauce when serving if desired.
