Scale
- 2 cups uncooked jasmine or long-grain white rice
- 3 cups chicken or vegetable broth
- 1 cup frozen peas and carrots
- 1/2 cup diced onion
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- 2 eggs, lightly beaten
- 2 green onions, sliced
- Salt and pepper, to taste
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In the baking dish, combine uncooked rice, broth, peas and carrots, diced onion, soy sauce, and sesame oil. Stir well.
- Cover tightly with aluminum foil and bake for 35–40 minutes, or until rice is cooked and liquid is absorbed.
- Remove from oven, create a well in the center, pour in the beaten eggs, and stir gently to distribute. Cover and bake for another 5–7 minutes until eggs are cooked through.
- Fluff rice with a fork and stir in sliced green onions. Season with salt and pepper to taste.
- Serve warm as a side or add cooked chicken, shrimp, or tofu to make it a meal.
Notes
- Use leftover rice for a faster version — reduce baking time and just bake until heated through.
- Add extra veggies like corn, bell peppers, or edamame for variety.
- Top with sriracha or drizzle with extra soy sauce when serving if desired.
