Description

Crispy baked chicken pieces coated in a sweet and spicy honey buffalo sauce—perfect for game day snacks, party appetizers, or a bold-flavored dinner.


Ingredients

  • 500g boneless chicken breast or thighs, cut into bite-sized pieces
  • 1 cup buttermilk
  • 1 cup panko breadcrumbs
  • 1/2 cup crushed cornflakes
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Cooking spray or oil for greasing
  • 1/4 cup hot buffalo sauce
  • 2 tbsp honey
  • 2 tbsp unsalted butter
  • Chopped green onions or parsley for garnish (optional)

Instructions

  1. Preheat oven to 220°C (425°F). Line a baking sheet with parchment paper and lightly grease with oil or cooking spray.
  2. In a bowl, marinate chicken pieces in buttermilk for at least 20 minutes (or overnight for more tenderness).
  3. In another bowl, mix panko breadcrumbs, crushed cornflakes, garlic powder, paprika, salt, and pepper.
  4. Remove chicken from buttermilk and coat each piece in the breadcrumb mixture. Place on prepared baking sheet.
  5. Bake for 20-25 minutes, flipping halfway, until golden and crispy.
  6. While baking, combine buffalo sauce, honey, and butter in a small saucepan. Heat over low heat until melted and smooth.
  7. Remove chicken from oven and toss or drizzle with honey buffalo sauce. Garnish with green onions or parsley if desired. Serve immediately.
