- 500g boneless chicken breast or thighs, cut into bite-sized pieces
- 1 cup buttermilk
- 1 cup panko breadcrumbs
- 1/2 cup crushed cornflakes
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper to taste
- Cooking spray or oil for greasing
- 1/4 cup hot buffalo sauce
- 2 tbsp honey
- 2 tbsp unsalted butter
- Chopped green onions or parsley for garnish (optional)
Instructions
- Preheat oven to 220°C (425°F). Line a baking sheet with parchment paper and lightly grease with oil or cooking spray.
- In a bowl, marinate chicken pieces in buttermilk for at least 20 minutes (or overnight for more tenderness).
- In another bowl, mix panko breadcrumbs, crushed cornflakes, garlic powder, paprika, salt, and pepper.
- Remove chicken from buttermilk and coat each piece in the breadcrumb mixture. Place on prepared baking sheet.
- Bake for 20-25 minutes, flipping halfway, until golden and crispy.
- While baking, combine buffalo sauce, honey, and butter in a small saucepan. Heat over low heat until melted and smooth.
- Remove chicken from oven and toss or drizzle with honey buffalo sauce. Garnish with green onions or parsley if desired. Serve immediately.
