For the Wings:
- 2 lbs (900g) chicken wings (split into drumettes and flats)
- 1 tbsp baking powder (NOT baking soda)
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp onion powder
- 1/2 tsp cayenne pepper (optional, for spice)
For the Sauce (Optional):
- 1/2 cup buffalo sauce (or barbecue, honey garlic, teriyaki, etc.)
- 2 tbsp melted butter
- 1 tbsp honey (optional, for sweetness)
Instructions
Step 1: Prep the Wings
- Preheat oven to 425°F (220°C).
- Pat chicken wings completely dry with paper towels. This helps them crisp up.
- In a large bowl, toss wings with baking powder, salt, black pepper, garlic powder, smoked paprika, onion powder, and cayenne (if using).
Step 2: Bake the Wings
- Line a baking sheet with parchment paper or place a wire rack over a baking sheet. Arrange wings in a single layer.
- Bake for 40-45 minutes, flipping halfway through, until crispy and golden brown.
Step 3: Coat in Sauce (Optional)
- While wings bake, mix buffalo sauce, melted butter, and honey in a bowl.
- Toss the baked wings in the sauce or serve it on the side for dipping.
Step 4: Serve & Enjoy
- Serve hot with ranch, blue cheese dressing, and celery sticks.
Notes
- Extra Crispy Wings: Bake on a wire rack for even airflow.
- No Baking Powder? Use cornstarch for a similar effect.
- Air Fryer Version: Cook at 400°F (200°C) for 20-25 minutes, shaking halfway through.
- Storage: Refrigerate leftovers for up to 3 days. Reheat in a 400°F oven for 10 minutes.
