Description

These Baileys Chocolate Cupcakes are rich, moist, and infused with creamy Baileys Irish Cream. Topped with a silky Baileys buttercream frosting, they’re perfect for St. Patrick’s Day, parties, or anytime you need a decadent boozy dessert!


Ingredients

For the Chocolate Cupcakes:

  • 1 cup (125 g) all-purpose flour
  • 1/2 cup (50 g) unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (100 g) granulated sugar
  • 1/2 cup (100 g) brown sugar
  • 2 large eggs
  • 1/2 cup (120 ml) vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup (120 ml) Baileys Irish Cream
  • 1/4 cup (60 ml) hot coffee or hot water

For the Baileys Buttercream Frosting:

  • 1 cup (225 g) unsalted butter, softened
  • 3 cups (360 g) powdered sugar
  • 1/4 cup (60 ml) Baileys Irish Cream
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsweetened cocoa powder (for chocolate version, optional)

For Garnish (Optional):

  • Chocolate shavings or cocoa powder
  • Mini chocolate chips
  • Baileys drizzle

Instructions

1️⃣ Preheat & Prep

  • Preheat oven to 350°F (175°C).
  • Line a 12-cup muffin tin with cupcake liners.

2️⃣ Make the Chocolate Cupcakes

  1. In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  2. In another bowl, whisk granulated sugar, brown sugar, eggs, oil, and vanilla extract until smooth.
  3. Mix in Baileys Irish Cream.
  4. Gradually add the dry ingredients, then stir in hot coffee until smooth.
  5. Divide batter evenly among the cupcake liners, filling ¾ full.

3️⃣ Bake the Cupcakes

  • Bake for 18-22 minutes, until a toothpick inserted comes out clean.
  • Let cool completely before frosting.

4️⃣ Make the Baileys Buttercream Frosting

  1. Beat butter until creamy (2 minutes).
  2. Gradually add powdered sugar, beating until fluffy.
  3. Mix in Baileys Irish Cream and vanilla extract.
  4. (For chocolate frosting, add cocoa powder).

5️⃣ Frost & Garnish

  • Pipe or spread frosting onto cooled cupcakes.
  • Sprinkle with chocolate shavings or cocoa powder.
