For the Chocolate Cupcakes:
- 1 cup (125 g) all-purpose flour
- 1/2 cup (50 g) unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup (100 g) granulated sugar
- 1/2 cup (100 g) brown sugar
- 2 large eggs
- 1/2 cup (120 ml) vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup (120 ml) Baileys Irish Cream
- 1/4 cup (60 ml) hot coffee or hot water
For the Baileys Buttercream Frosting:
- 1 cup (225 g) unsalted butter, softened
- 3 cups (360 g) powdered sugar
- 1/4 cup (60 ml) Baileys Irish Cream
- 1 teaspoon vanilla extract
- 2 tablespoons unsweetened cocoa powder (for chocolate version, optional)
For Garnish (Optional):
- Chocolate shavings or cocoa powder
- Mini chocolate chips
- Baileys drizzle
Instructions
1️⃣ Preheat & Prep
- Preheat oven to 350°F (175°C).
- Line a 12-cup muffin tin with cupcake liners.
2️⃣ Make the Chocolate Cupcakes
- In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, whisk granulated sugar, brown sugar, eggs, oil, and vanilla extract until smooth.
- Mix in Baileys Irish Cream.
- Gradually add the dry ingredients, then stir in hot coffee until smooth.
- Divide batter evenly among the cupcake liners, filling ¾ full.
3️⃣ Bake the Cupcakes
- Bake for 18-22 minutes, until a toothpick inserted comes out clean.
- Let cool completely before frosting.
4️⃣ Make the Baileys Buttercream Frosting
- Beat butter until creamy (2 minutes).
- Gradually add powdered sugar, beating until fluffy.
- Mix in Baileys Irish Cream and vanilla extract.
- (For chocolate frosting, add cocoa powder).
5️⃣ Frost & Garnish
- Pipe or spread frosting onto cooled cupcakes.
- Sprinkle with chocolate shavings or cocoa powder.
