Description

This Bacon Cheeseburger Meatloaf combines all the flavors of a classic cheeseburger into a juicy, cheesy, and smoky meatloaf, wrapped in crispy bacon. It’s the perfect comfort food for burger lovers and an easy way to upgrade traditional meatloaf!

For the Meatloaf:

  • 1 1/2 lbs ground beef (80/20 for juiciness)
  • 1/2 lb ground pork (optional, adds tenderness)
  • 1 cup breadcrumbs (panko or regular)
  • 1/2 cup milk
  • 1 egg
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon ketchup
  • 1 teaspoon mustard (yellow or Dijon)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 1/2 cups cheddar cheese, shredded
  • 810 slices bacon

For the Glaze:

  • 1/4 cup ketchup
  • 1 tablespoon mustard
  • 1 tablespoon brown sugar
  • 1 teaspoon apple cider vinegar (optional, for tang)

Instructions

Step 1: Prepare the Meatloaf Mixture

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a small bowl, mix breadcrumbs and milk; let sit for 5 minutes (helps keep the meatloaf moist).
  3. In a large bowl, combine ground beef, pork, onion, garlic, Worcestershire sauce, ketchup, mustard, salt, pepper, and paprika.
  4. Stir in the soaked breadcrumbs, then gently fold in the shredded cheese.

Step 2: Shape & Wrap in Bacon

  1. Shape the meat mixture into a loaf and place it on the baking sheet.
  2. Lay bacon slices over the top, tucking the ends underneath.

Step 3: Make & Apply the Glaze

  1. In a small bowl, mix ketchup, mustard, brown sugar, and apple cider vinegar.
  2. Brush half the glaze over the bacon-wrapped meatloaf.

Step 4: Bake to Perfection

  1. Bake for 45 minutes, then brush on the remaining glaze.
  2. Continue baking for 15-20 minutes, or until the internal temperature reaches 160°F (71°C).
  3. Let rest for 10 minutes, then slice and serve.

  • Serve with mashed potatoes, roasted veggies, or burger-style toppings (pickles, lettuce, tomatoes, etc.)!
