This Bacon Cheeseburger Meatloaf combines all the flavors of a classic cheeseburger into a juicy, cheesy, and smoky meatloaf, wrapped in crispy bacon. It’s the perfect comfort food for burger lovers and an easy way to upgrade traditional meatloaf!

For the Meatloaf:
- 1 1/2 lbs ground beef (80/20 for juiciness)
- 1/2 lb ground pork (optional, adds tenderness)
- 1 cup breadcrumbs (panko or regular)
- 1/2 cup milk
- 1 egg
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 tablespoon ketchup
- 1 teaspoon mustard (yellow or Dijon)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 1/2 cups cheddar cheese, shredded
- 8–10 slices bacon
For the Glaze:
- 1/4 cup ketchup
- 1 tablespoon mustard
- 1 tablespoon brown sugar
- 1 teaspoon apple cider vinegar (optional, for tang)
Instructions
Step 1: Prepare the Meatloaf Mixture
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a small bowl, mix breadcrumbs and milk; let sit for 5 minutes (helps keep the meatloaf moist).
- In a large bowl, combine ground beef, pork, onion, garlic, Worcestershire sauce, ketchup, mustard, salt, pepper, and paprika.
- Stir in the soaked breadcrumbs, then gently fold in the shredded cheese.
Step 2: Shape & Wrap in Bacon
- Shape the meat mixture into a loaf and place it on the baking sheet.
- Lay bacon slices over the top, tucking the ends underneath.
Step 3: Make & Apply the Glaze
- In a small bowl, mix ketchup, mustard, brown sugar, and apple cider vinegar.
- Brush half the glaze over the bacon-wrapped meatloaf.
Step 4: Bake to Perfection
- Bake for 45 minutes, then brush on the remaining glaze.
- Continue baking for 15-20 minutes, or until the internal temperature reaches 160°F (71°C).
- Let rest for 10 minutes, then slice and serve.
