For the filling:
- 1/2 lb (225 g) ground beef
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon smoked paprika (optional)
- Salt and pepper, to taste
- 4 slices of cooked bacon, crumbled or halved
- 4 slices of cheddar cheese (or your preferred cheese)
For the grilled cheese:
- 8 slices of bread (sourdough, white, or brioche work well)
- 4 tablespoons (60 g) butter, softened
- 2 tablespoons mayonnaise (optional, for spreading)
Optional toppings:
- Pickles, thinly sliced
- Ketchup or mustard
- Thinly sliced onions
Instructions
- Cook the ground beef:
- Heat a skillet over medium heat. Add the ground beef and cook, breaking it up with a spatula, until browned and fully cooked.
- Season with garlic powder, onion powder, smoked paprika (if using), salt, and pepper. Remove from heat and drain any excess fat.
- Assemble the sandwiches:
- Butter one side of each slice of bread. If using mayonnaise, spread it on the opposite side of the bread slices.
- Place a slice of cheese on the unbuttered side of one piece of bread. Top with a portion of the cooked ground beef, crumbled bacon, and optional toppings like pickles or onions. Add another slice of cheese and top with a second slice of bread, buttered side facing out. Repeat for all sandwiches.
- Cook the grilled cheese:
- Heat a clean skillet or griddle over medium heat. Place the assembled sandwiches in the skillet and cook until the bread is golden brown and crispy, about 3-4 minutes per side. Press gently with a spatula to help the cheese melt evenly.
- Serve:
- Slice the sandwiches in half and serve immediately with ketchup, mustard, or your favorite dipping sauce.
