Instructions

  1. In a large bowl, combine shrimp, diced avocados, cherry tomatoes, red onion, cilantro, and jalapeño (if using).
  2. In a small bowl, whisk together olive oil, lime juice, salt, and pepper.
  3. Pour the dressing over the shrimp mixture and gently toss to coat.
  4. Serve immediately on its own or over a bed of mixed greens or lettuce.
  5. Optional: chill for 15–30 minutes before serving for enhanced flavor.
