Ingredients

1 1/2 lbs boneless, skinless chicken breast or thighs, cut into 1.5-inch cubes

3 tbsp olive oil

2 tbsp fresh lemon juice (about 1 lemon)

2 cloves garlic, minced

1 tsp dried oregano

1/2 tsp dried thyme (or rosemary)

1/2 tsp salt

1/4 tsp black pepper

Instructions

Marinate the Chicken:
In a large bowl or zip-top bag, combine olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper. Add chicken cubes and toss to coat. Cover and marinate in the fridge for at least 30 minutes (or up to 4 hours for deeper flavor). -
Prep the Skewers:
If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread marinated chicken onto skewers. -
Grill the Souvlaki:
Preheat grill or grill pan to medium-high heat. Grill chicken skewers for 10–12 minutes, turning every few minutes, until cooked through and slightly charred on the edges. -
Serve:
Serve hot with pita, tzatziki, and your favorite Greek sides, or over a bed of rice with a squeeze of fresh lemon.

Thighs stay extra juicy, but breasts work great too!

You can also bake these in the oven at 425°F for 20–25 minutes or cook in a stovetop grill pan.
