Description

These Applesauce Muffins are soft, moist, and bursting with warm cinnamon flavor! Made with applesauce, cinnamon, and brown sugar, they’re a deliciously healthy breakfast or snack option. Plus, they’re easy to make and naturally sweetened!

Dry Ingredients:

  • 1 3/4 cups all-purpose flour (or whole wheat flour for a healthier version)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional, for extra warmth)

Wet Ingredients:

  • 1 cup unsweetened applesauce
  • 1/2 cup brown sugar (or coconut sugar for a natural alternative)
  • 1/3 cup vegetable oil (or melted butter)
  • 2 eggs
  • 1 teaspoon vanilla extract

Optional Add-Ins:

  • 1/2 cup chopped walnuts or pecans
  • 1/2 cup raisins or dried cranberries

For Topping (Optional):

  • 2 tablespoons sugar + 1/2 teaspoon cinnamon (for a crunchy topping)



Instructions

1. Preheat & Prep

  1. Preheat your oven to 375°F (190°C).
  2. Line a 12-cup muffin tin with paper liners or grease with cooking spray.

2. Mix the Batter

  1. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  2. In another bowl, whisk applesauce, brown sugar, oil, eggs, and vanilla until smooth.
  3. Gradually fold the wet ingredients into the dry ingredients until just combined. (Do not overmix!)
  4. Stir in nuts or dried fruit if using.

3. Fill & Bake

  1. Divide the batter evenly among the muffin cups, filling each about ¾ full.
  2. If using, sprinkle cinnamon-sugar on top.
  3. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.

4. Cool & Serve

  1. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  2. Enjoy warm or store in an airtight container for up to 4 days!



Notes

  • Want them extra moist? Add ¼ cup Greek yogurt or sour cream to the batter.
  • Gluten-Free? Use a 1:1 gluten-free flour blend.
  • Vegan Option? Replace eggs with flax eggs (1 tbsp flaxseed + 2 tbsp water per egg).
