Description

These Apple Turnovers are flaky, buttery pastries filled with a spiced apple filling and baked until golden brown. Crispy on the outside, warm and gooey on the inside, they make the perfect breakfast, snack, or dessert. Serve them warm with a dusting of powdered sugar or a drizzle of glaze for an extra indulgent treat!

Ingredients

Scale

For the Apple Filling:

  • 2 medium apples (Granny Smith, Honeycrisp, or Fuji – peeled & diced)
  • 1/4 cup granulated sugar
  • 1 tbsp brown sugar
  • 1 tsp cinnamon
  • 1 tbsp cornstarch (or flour, to thicken the filling)
  • 1 tbsp lemon juice (to balance the sweetness)
  • 1 tbsp butter (for a rich, glossy filling!)

For the Turnovers:

  • 1 sheet of puff pastry, thawed (or homemade if you prefer!)
  • 1 egg + 1 tbsp milk (for egg wash)

For the Optional Glaze:

  • 1/2 cup powdered sugar
  • 1 tbsp milk (adjust for consistency)
  • 1/2 tsp vanilla extract

Instructions

Step 1: Prepare the Apple Filling

  1. In a pan over medium heat, melt butter and add diced apples.
  2. Stir in sugar, brown sugar, cinnamon, cornstarch, and lemon juice.
  3. Cook for 5-7 minutes, until the apples are soft and the sauce has thickened.
  4. Remove from heat and let cool completely.

Step 2: Prepare the Puff Pastry

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Roll out puff pastry and cut into 8 equal squares or rectangles.
  3. Spoon 1-2 tablespoons of apple filling onto one half of each square, leaving a border around the edges.
  4. Fold the pastry over to form a triangle or rectangle, then press the edges with a fork to seal.
  5. Brush the tops with egg wash and cut a small vent slit in each turnover.

Step 3: Bake the Turnovers

  1. Place turnovers on the prepared baking sheet.
  2. Bake for 18-22 minutes, until golden brown and puffed.
  3. Let cool slightly before adding glaze (if using).

Step 4: Make the Glaze & Serve

  1. Whisk together powdered sugar, milk, and vanilla extract until smooth.
  2. Drizzle over warm turnovers and let set for a few minutes before serving.

Serving & Storage

  • Serve warm for the best flavor and texture!
  • Store leftovers in an airtight container at room temperature for 2 days, or in the fridge for up to 5 days.
  • Reheat in the oven at 350°F (175°C) for 5 minutes to regain crispiness.

Notes

  • Make them extra flaky! Chill the assembled turnovers for 10 minutes before baking.
  • Add caramel! Drizzle salted caramel sauce inside before sealing for a caramel apple turnover.
  • Want a crunchy topping? Sprinkle coarse sugar on top before baking.
  • Try other fruits! Swap apples for pears, peaches, or berries for a fruity twist.
