Description

Apple Pie Bombs are a fun and easy twist on classic apple pie. Made with biscuit dough, a spiced apple filling, and a buttery cinnamon-sugar coating, these bite-sized treats are gooey, sweet, and perfect for dessert or a snack.

For the Filling:

  • 2 cups (300g) diced apples (peeled and cored)
  • 1/4 cup (50g) granulated sugar
  • 1 tsp ground cinnamon
  • 1 tbsp unsalted butter
  • 1 tsp cornstarch
  • 1 tbsp water

For the Dough:

  • 1 can (16 oz/454g) refrigerated biscuit dough (8 biscuits)

For the Coating:

  • 1/2 cup (100g) granulated sugar
  • 1 tsp ground cinnamon
  • 3 tbsp unsalted butter, melted



Instructions

  • Prepare the Apple Filling:
    • In a medium skillet, melt the butter over medium heat. Add the diced apples, sugar, and cinnamon. Cook for 5-7 minutes, stirring occasionally, until the apples are tender.
    • In a small bowl, mix the cornstarch with water. Stir this slurry into the apple mixture and cook for 1-2 minutes until thickened. Remove from heat and let cool.
  • Prepare the Dough:
    • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
    • Separate the biscuit dough into 8 pieces. Flatten each biscuit into a 4-inch circle.
  • Fill and Seal the Bombs:
    • Place a tablespoon of the cooled apple filling in the center of each dough circle. Fold the edges up and over the filling, pinching to seal tightly. Roll into a ball and place seam-side down on the prepared baking sheet.
  • Bake:
    • Bake the bombs for 12-15 minutes, or until golden brown and puffed.
  • Coat the Bombs:
    • In a small bowl, mix the sugar and cinnamon for the coating.
    • Brush the baked bombs with melted butter, then roll them in the cinnamon-sugar mixture until fully coated.
  • Serve:
    • Serve warm as is, or with a scoop of vanilla ice cream or caramel drizzle for an extra indulgent treat!

Notes

  • For a shortcut, use canned apple pie filling instead of making your own. Chop the filling into smaller pieces for easier assembly.
  • These bombs are best enjoyed fresh but can be stored in an airtight container at room temperature for up to 2 days. Reheat in the microwave or oven before serving.
  • Add a pinch of nutmeg or allspice to the filling for a spiced twist.
