These Apple Pie Biscuits combine tender, flaky biscuits with warm apple pie filling, a touch of cinnamon, and a sweet glaze. Baked in a skillet or baking dish, they make a cozy treat perfect for breakfast, brunch, or dessert.

For the Biscuits:

  • 1 can refrigerated biscuits (8 large buttermilk or flaky biscuits)
  • 4 tablespoons unsalted butter, melted

For the Apple Filling:

  • 4 medium apples, peeled, cored, and chopped (or 1 can apple pie filling, chopped)
  • 1/2 cup brown sugar
  • 1 tablespoon lemon juice
  • 1 1/4 teaspoons ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 tablespoon cornstarch (if using fresh apples)
  • 1 teaspoon vanilla extract

For the Cinnamon Sugar Coating:

  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon

For the Glaze:

  • 1/2 cup powdered sugar
  • 23 tablespoons heavy cream or milk
  • 1/2 teaspoon vanilla extract

 


Instructions

  1. Preheat Oven and Prepare Skillet:

    • Preheat your oven to 375°F (190°C). Grease a 10-12 inch cast iron skillet or baking dish with a bit of the melted butter.
  2. Make the Apple Filling:

    • In a saucepan, combine the chopped apples, brown sugar, lemon juice, cinnamon, nutmeg, and cornstarch. Cook over medium heat, stirring often, until the apples are soft and the mixture thickens (about 10-12 minutes). Stir in vanilla extract and set aside.
  3. Prepare the Biscuits:

    • In a small bowl, mix the granulated sugar and cinnamon.
    • Dip each biscuit in the melted butter, then coat with the cinnamon-sugar mixture. Arrange the coated biscuits in the skillet.
  4. Assemble and Bake:

    • Spoon the apple filling evenly over the top of the biscuits. Pour any remaining melted butter over the top.
    • Bake for 30-35 minutes, or until the biscuits are golden brown and cooked through.
  5. Make the Glaze:

    • In a small bowl, whisk together the powdered sugar, heavy cream, and vanilla until smooth. Drizzle over the warm biscuits.
  6. Serve:

    • Serve warm, optionally with vanilla ice cream or whipped cream.

Notes

  • Using Canned Filling: If using canned apple pie filling, simply chop the apples into smaller pieces and skip the cornstarch.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat before serving.
