Ingredients

Scale

(Makes about 24 bites)

For the Fritter Batter:

  • 1 cup all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg (optional)
  • 1/4 tsp salt
  • 1/3 cup milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup diced apple (Granny Smith or Honeycrisp work well)

For Frying:

  • Vegetable oil, for frying

For the Glaze:

  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1/2 tsp vanilla extract

Instructions

1. Prepare the Batter:

  1. In a medium mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  2. In another bowl, mix the milk, egg, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, stirring until combined.
  3. Fold in the diced apples.

2. Heat the Oil:

  1. Heat about 2 inches of vegetable oil in a deep skillet or heavy-bottomed pot over medium heat until it reaches 350°F (175°C).
  2. If you don’t have a thermometer, test the oil by dropping a small amount of batter into it; it should sizzle and turn golden brown in about 1 minute.

3. Fry the Fritter Bites:

  1. Using a tablespoon or small cookie scoop, drop spoonfuls of batter into the hot oil. Fry in batches to avoid overcrowding.
  2. Cook for 2-3 minutes per side, until golden brown and cooked through.
  3. Remove the fritter bites with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.

4. Make the Glaze:

  1. In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth. Adjust the consistency with more milk or powdered sugar as needed.

5. Glaze the Fritter Bites:

  1. Dip the warm fritter bites into the glaze or drizzle the glaze over them. Place on a wire rack to let the glaze set.

Notes

  • Apples: Dice the apples into small, uniform pieces to ensure even cooking.
  • No Fry Thermometer? If the oil is too hot, the fritters will brown too quickly and stay raw inside; too cool, and they’ll absorb excess oil. Adjust the heat as needed.
  • Storage: Best enjoyed fresh, but you can store them in an airtight container for up to 2 days. Reheat in the oven at 350°F (175°C) for a few minutes to crisp up.
