Description

This Apple Coffee Cake with Cream Cheese Filling is a soft, moist cake layered with cinnamon-spiced apples and a smooth cream cheese center. Ingredients

For the Cake Batter:

  • 1/2 cup unsalted butter, softened

  • 1/2 cup granulated sugar

  • 1/4 cup brown sugar, packed

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1/2 cup sour cream or plain Greek yogurt

  • 1 1/2 cups all-purpose flour

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1 tsp ground cinnamon

  • 1 1/2 cups peeled, chopped apples (Honeycrisp or Granny Smith work great)

For the Cream Cheese Filling:

  • 8 oz cream cheese, softened

  • 1/4 cup granulated sugar

  • 1 large egg

  • 1/2 tsp vanilla extract

For the Crumb Topping:

  • 1/3 cup brown sugar

  • 1/3 cup flour

  • 1/2 tsp cinnamon

  • 3 tbsp cold butter, cubed

Optional Glaze:

  • 1/2 cup powdered sugar

  • 1-2 tbsp milk

  • Splash of vanilla


Instructions

1. Preheat Oven & Prepare Pan:

  • Preheat oven to 350°F (175°C).

  • Grease and line a 9-inch springform pan or a deep 8×8-inch square baking dish.

2. Make the Cream Cheese Filling:

  • In a bowl, beat cream cheese, sugar, egg, and vanilla until smooth. Set aside.

3. Make the Crumb Topping:

  • In a small bowl, mix brown sugar, flour, and cinnamon.

  • Cut in the cold butter with a fork or your fingers until crumbly. Chill while you make the batter.

4. Make the Cake Batter:

  • In a large bowl, cream together butter, granulated sugar, and brown sugar until fluffy.

  • Beat in eggs one at a time, then add vanilla and sour cream.

  • In another bowl, whisk flour, baking powder, baking soda, salt, and cinnamon.

  • Add dry ingredients to wet and mix just until combined.

  • Gently fold in chopped apples.

5. Assemble the Cake:

  • Spread half the cake batter into the prepared pan.

  • Evenly spread cream cheese filling over the batter.

  • Spoon remaining batter over the top and spread gently.

  • Sprinkle the crumb topping evenly over everything.

6. Bake:

  • Bake for 50–60 minutes, or until a toothpick inserted into the center comes out mostly clean.

  • Let cool completely in the pan.

7. Optional Glaze:

  • Mix powdered sugar, milk, and vanilla until smooth.

  • Drizzle over the cooled cake just before serving.
