Ingredients
For the Cake Batter:

For the Cream Cheese Filling:

For the Crumb Topping:

1/3 cup brown sugar

1/3 cup flour

1/2 tsp cinnamon

3 tbsp cold butter, cubed
Optional Glaze:

1/2 cup powdered sugar

1-2 tbsp milk
-
Splash of vanilla
Instructions
1. Preheat Oven & Prepare Pan:

Preheat oven to 350°F (175°C).

Grease and line a 9-inch springform pan or a deep 8×8-inch square baking dish.
2. Make the Cream Cheese Filling:

In a bowl, beat cream cheese, sugar, egg, and vanilla until smooth. Set aside.
3. Make the Crumb Topping:

In a small bowl, mix brown sugar, flour, and cinnamon.

Cut in the cold butter with a fork or your fingers until crumbly. Chill while you make the batter.
4. Make the Cake Batter:

In a large bowl, cream together butter, granulated sugar, and brown sugar until fluffy.

Beat in eggs one at a time, then add vanilla and sour cream.

In another bowl, whisk flour, baking powder, baking soda, salt, and cinnamon.

Add dry ingredients to wet and mix just until combined.

Gently fold in chopped apples.
5. Assemble the Cake:

Spread half the cake batter into the prepared pan.
