- 1 sheet puff pastry, thawed
- 1 apple, peeled and finely chopped
- 2 tablespoons brown sugar
- 1/2 teaspoon ground cinnamon
- 1 teaspoon cornstarch
- 1 tablespoon lemon juice
- 1 egg, beaten (for egg wash)
- 1/4 cup powdered sugar
- 1 tablespoon milk
- 1/4 teaspoon vanilla extract
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a small saucepan over medium heat, combine chopped apple, brown sugar, cinnamon, cornstarch, and lemon juice. Cook for 5–7 minutes until the apples are soft and mixture is thickened. Let cool.
- Roll out puff pastry and cut into 6 equal rectangles.
- Spoon apple filling onto three of the rectangles, leaving a small border.
- Top with the remaining pastry rectangles and crimp the edges with a fork to seal.
- Brush the tops with beaten egg.
- Bake for 18–20 minutes or until golden brown and puffed.
- While baking, mix powdered sugar, milk, and vanilla extract to make the glaze.
- Let the strudels cool slightly, then drizzle with glaze before serving.
Notes
- Use Granny Smith apples for a tart flavor or Honeycrisp for sweetness.
- Let strudels cool before glazing to avoid melting the icing too much.
- Store leftovers in an airtight container for up to 2 days.
