Description

This cake combines the warm spices of cinnamon and nutmeg with the tangy sweetness of apple cider. Topped with a buttery cinnamon sugar coating, it’s like a giant, shareable apple cider donut.

For the cake:

  • 1 1/2 cups (360 ml) apple cider (reduced to 1 cup)
  • 2 1/2 cups (310 g) all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup (115 g) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • 1/2 cup (110 g) light brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup (120 ml) buttermilk

For the topping:

  • 1/4 cup (55 g) unsalted butter, melted
  • 1/2 cup (100 g) granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  • Reduce the apple cider:
    • In a small saucepan, bring the apple cider to a boil, then reduce the heat to simmer until it’s reduced to 1 cup. This should take about 10-15 minutes. Let it cool completely.
  • Preheat the oven:
    • Preheat your oven to 350°F (175°C). Grease and flour a bundt pan, or spray with non-stick baking spray.
  • Mix the dry ingredients:
    • In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • Cream the butter and sugars:
    • In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  • Add the wet ingredients:
    • Beat in the eggs one at a time, followed by the vanilla extract and cooled reduced apple cider. Mix until smooth.
  • Combine wet and dry ingredients:
    • Alternately add the dry ingredients and buttermilk to the wet mixture, starting and ending with the dry ingredients. Mix until just combined.
  • Bake the cake:
    • Pour the batter into the prepared bundt pan and smooth the top. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool and prepare the topping:
    • Let the cake cool in the pan for 15 minutes before turning it out onto a wire rack. While the cake is still warm, brush it with melted butter and sprinkle the cinnamon sugar mixture over the top and sides.
  • Serve:
    • Let the cake cool completely before slicing and serving.

Notes

  • For extra apple flavor, use spiced apple cider or add 1/2 teaspoon of apple pie spice to the batter.
