For the cake:
- 1 1/2 cups (360 ml) apple cider (reduced to 1 cup)
- 2 1/2 cups (310 g) all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/2 cup (115 g) unsalted butter, softened
- 1 cup (200 g) granulated sugar
- 1/2 cup (110 g) light brown sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup (120 ml) buttermilk
For the topping:
- 1/4 cup (55 g) unsalted butter, melted
- 1/2 cup (100 g) granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Reduce the apple cider:
- In a small saucepan, bring the apple cider to a boil, then reduce the heat to simmer until it’s reduced to 1 cup. This should take about 10-15 minutes. Let it cool completely.
- Preheat the oven:
- Preheat your oven to 350°F (175°C). Grease and flour a bundt pan, or spray with non-stick baking spray.
- Mix the dry ingredients:
- In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Cream the butter and sugars:
- In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
- Add the wet ingredients:
- Beat in the eggs one at a time, followed by the vanilla extract and cooled reduced apple cider. Mix until smooth.
- Combine wet and dry ingredients:
- Alternately add the dry ingredients and buttermilk to the wet mixture, starting and ending with the dry ingredients. Mix until just combined.
- Bake the cake:
- Pour the batter into the prepared bundt pan and smooth the top. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and prepare the topping:
- Let the cake cool in the pan for 15 minutes before turning it out onto a wire rack. While the cake is still warm, brush it with melted butter and sprinkle the cinnamon sugar mixture over the top and sides.
- Serve:
- Let the cake cool completely before slicing and serving.
Notes
- For extra apple flavor, use spiced apple cider or add 1/2 teaspoon of apple pie spice to the batter.
- Store the cake in an airtight container at room temperature for up to 3 days.
