Makes about 24 cookies:
- 1/2 cup (115 g) unsalted butter, softened
- 1/2 cup (100 g) granulated sugar
- 1/2 cup (100 g) brown sugar, packed
- 1 large egg
- 1/2 cup (120 g) apple butter
- 1 teaspoon vanilla extract
- 1 3/4 cups (220 g) all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg (optional)
- For topping (optional):
- 2 tablespoons granulated sugar
- 1/2 teaspoon ground cinnamon
Instructions
- Preheat the oven:
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
- Cream the butter and sugars:
- In a large bowl, use an electric mixer to beat the butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
- Add wet ingredients:
- Mix in the egg, apple butter, and vanilla extract until fully incorporated.
- Combine dry ingredients:
- In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Shape the cookies:
- Scoop about 1 tablespoon of dough and roll it into a ball. If desired, mix the optional topping (sugar and cinnamon) in a small bowl and roll each dough ball in the mixture. Place the balls on the prepared baking sheets, spacing them about 2 inches apart.
- Bake:
- Bake in the preheated oven for 10-12 minutes, or until the edges are set and the centers look slightly soft. Let the cookies cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
