- Dry ingredients:
- 2 cups (250 g) all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- Wet ingredients:
- 1/2 cup (100 g) granulated sugar
- 1/4 cup (60 ml) honey
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon anise extract or 1 tablespoon anise seeds
- Mix-ins:
- 1 cup (120 g) whole almonds, toasted and roughly chopped
Instructions
- Preheat the oven:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Mix dry ingredients:
- In a medium bowl, whisk together the flour, baking powder, and salt.
- Prepare wet ingredients:
- In a large mixing bowl, beat the sugar, honey, and eggs together until light and frothy, about 2 minutes. Add the vanilla extract and anise extract (or anise seeds) and mix well.
- Combine wet and dry ingredients:
- Gradually add the dry ingredients to the wet mixture, mixing until a dough forms. Stir in the chopped almonds.
- Shape the dough:
- Lightly flour your hands and divide the dough into two equal portions. Shape each portion into a log about 12 inches long and 2 inches wide. Place the logs onto the prepared baking sheet, spacing them apart.
- First bake:
- Bake for 25-30 minutes, or until the logs are golden and firm to the touch. Remove from the oven and let cool for 10-15 minutes. Reduce the oven temperature to 325°F (165°C).
- Slice and second bake:
- Using a serrated knife, slice the logs diagonally into 1/2-inch thick biscotti. Arrange the slices cut side down on the baking sheet.
- Bake for 10 minutes, then flip the biscotti and bake for an additional 8-10 minutes, or until crisp and golden.
- Cool and serve:
- Transfer the biscotti to a wire rack to cool completely. Serve with coffee, tea, or your favorite dessert wine.
