  • Dry ingredients:
    • 2 cups (250 g) all-purpose flour
    • 1 teaspoon baking powder
    • 1/4 teaspoon salt
  • Wet ingredients:
    • 1/2 cup (100 g) granulated sugar
    • 1/4 cup (60 ml) honey
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 1 teaspoon anise extract or 1 tablespoon anise seeds
  • Mix-ins:
    • 1 cup (120 g) whole almonds, toasted and roughly chopped

Instructions

  1. Preheat the oven:
    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix dry ingredients:
    • In a medium bowl, whisk together the flour, baking powder, and salt.
  3. Prepare wet ingredients:
    • In a large mixing bowl, beat the sugar, honey, and eggs together until light and frothy, about 2 minutes. Add the vanilla extract and anise extract (or anise seeds) and mix well.
  4. Combine wet and dry ingredients:
    • Gradually add the dry ingredients to the wet mixture, mixing until a dough forms. Stir in the chopped almonds.
  5. Shape the dough:
    • Lightly flour your hands and divide the dough into two equal portions. Shape each portion into a log about 12 inches long and 2 inches wide. Place the logs onto the prepared baking sheet, spacing them apart.
  6. First bake:
    • Bake for 25-30 minutes, or until the logs are golden and firm to the touch. Remove from the oven and let cool for 10-15 minutes. Reduce the oven temperature to 325°F (165°C).
  7. Slice and second bake:
    • Using a serrated knife, slice the logs diagonally into 1/2-inch thick biscotti. Arrange the slices cut side down on the baking sheet.
    • Bake for 10 minutes, then flip the biscotti and bake for an additional 8-10 minutes, or until crisp and golden.
  8. Cool and serve:
    • Transfer the biscotti to a wire rack to cool completely. Serve with coffee, tea, or your favorite dessert wine.

Notes

  • For a more intense anise flavor, increase the amount of anise extract or seeds.
  • Add a drizzle of melted chocolate over the cooled biscotti for extra indulgence.
