- For the casserole:
- 1 lb (450 g) ground beef or turkey
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 medium zucchini, diced
- 1 medium carrot, grated
- 1 cup (150 g) cooked rice (white or brown)
- 1 cup (120 g) shredded cheddar cheese
- 1 cup (240 ml) cream of mushroom soup (or cream of chicken soup)
- 1/2 cup (120 ml) milk
- 1 teaspoon dried thyme or Italian seasoning
- Salt and black pepper, to taste
- For topping (optional):
- 1/2 cup (50 g) breadcrumbs
- 2 tablespoons melted butter
- 1/4 cup (25 g) shredded Parmesan cheese
Instructions
- Preheat the oven:
- Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or butter.
- Cook the ground meat:
- In a large skillet, cook the ground beef or turkey over medium heat until browned. Drain any excess fat. Add the onion and garlic and cook for 2-3 minutes until softened.
- Prepare the vegetable mixture:
- Add the zucchini and carrot to the skillet with the meat mixture. Cook for another 3-4 minutes until the vegetables are tender. Season with salt, pepper, and thyme.
- Combine the casserole:
- In a large mixing bowl, combine the cooked rice, meat and vegetable mixture, cream of mushroom soup, milk, and shredded cheddar cheese. Mix until evenly combined.
- Assemble in the baking dish:
- Spread the mixture evenly in the prepared baking dish.
- Add the topping (optional):
- In a small bowl, mix the breadcrumbs with melted butter and Parmesan cheese. Sprinkle the topping evenly over the casserole.
- Bake:
- Bake in the preheated oven for 25-30 minutes, or until bubbly and golden on top.
- Serve:
- Let cool for a few minutes before serving. Garnish with fresh parsley if desired.
