Description

  • 1 1/2 cups vanilla or cream cheese frosting
  • 1/2 cup blueberries
  • 1 cup sliced strawberries

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
  3. In a large bowl, cream together the butter and sugar until light and fluffy.
  4. Beat in the egg, vanilla extract, and almond extract if using.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Press the dough evenly into the prepared baking dish.
  7. Bake for 18–20 minutes, or until lightly golden and set. Allow to cool completely in the pan.
  8. Spread the frosting evenly over the cooled cookie cake.
  9. Arrange the blueberries in the top left corner for the stars and the sliced strawberries in rows for the stripes.
  10. Chill in the refrigerator for 15–30 minutes before slicing and serving.
