- 1/2 teaspoon almond extract (optional)
- 1 1/2 cups vanilla or cream cheese frosting
- 1/2 cup blueberries
- 1 cup sliced strawberries
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper.
- In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the egg, vanilla extract, and almond extract if using.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Press the dough evenly into the prepared baking dish.
- Bake for 18–20 minutes, or until lightly golden and set. Allow to cool completely in the pan.
- Spread the frosting evenly over the cooled cookie cake.
- Arrange the blueberries in the top left corner for the stars and the sliced strawberries in rows for the stripes.
- Chill in the refrigerator for 15–30 minutes before slicing and serving.

- For a richer flavor, add a bit of almond extract.
