Scale
- 1 cup mini marshmallows
- 1 cup sour cream (or Greek yogurt for a lighter option)
- 1 cup sweetened shredded coconut
- 1 can (20 oz) pineapple chunks (drained)
- 1 can (15 oz) mandarin oranges (drained)
- 1 cup maraschino cherries (drained and halved)
- 1 cup seedless grapes (halved, optional)
- 1/2 cup chopped pecans or walnuts (optional)
Instructions
- Prepare the Ingredients:
- Drain the pineapple chunks, mandarin oranges, and maraschino cherries thoroughly to prevent the salad from becoming watery.
- Mix the Dressing:
- In a large mixing bowl, combine the sour cream and shredded coconut. Stir until evenly blended.
- Combine the Salad:
- Add the pineapple chunks, mandarin oranges, cherries, mini marshmallows, and grapes (if using) to the bowl. Gently fold the ingredients into the sour cream mixture to avoid breaking the fruit.
- Chill:
- Cover the bowl with plastic wrap and refrigerate for at least 2 hours (or overnight) to allow the flavors to meld and the salad to chill.
- Serve:
- Before serving, sprinkle with chopped pecans or walnuts for added crunch, if desired. Serve cold.
Notes
- For added sweetness, mix in 1-2 tablespoons of powdered sugar or whipped topping.
- Ambrosia salad can be made up to a day in advance and stored in the refrigerator.
- Feel free to add or swap fruits like diced apples, fresh strawberries, or blueberries.
