These Almond Joy Coconut Bites are a no-bake treat inspired by the classic Almond Joy candy bar. Featuring sweet coconut filling, crunchy almonds, and a rich chocolate coating, these bites are easy to make and perfect for satisfying your sweet tooth!

- 2 cups sweetened shredded coconut
- 1/2 cup sweetened condensed milk
- 1/2 tsp vanilla extract
- 12–15 whole almonds
- 1 1/2 cups semi-sweet or milk chocolate chips
- 1 tbsp coconut oil (optional, for smoother chocolate coating)
Instructions
1. Prepare the Coconut Filling:
- In a mixing bowl, combine the shredded coconut, sweetened condensed milk, and vanilla extract. Mix well until the mixture is sticky and holds together.
2. Shape the Bites:
- Scoop about 1 tablespoon of the coconut mixture and roll it into a small ball or oval shape.
- Press a whole almond into the top of each coconut bite and gently reshape if needed.
- Place the bites on a parchment-lined baking sheet. Freeze for 20-30 minutes to firm up.
3. Melt the Chocolate:
- In a microwave-safe bowl, melt the chocolate chips and coconut oil (if using) in 20-second intervals, stirring after each, until smooth and fully melted. Alternatively, melt the chocolate in a double boiler.
4. Coat the Bites:
- Using a fork or dipping tool, dip each coconut bite into the melted chocolate, ensuring it’s fully coated.
- Gently tap off any excess chocolate and place the coated bite back onto the parchment-lined baking sheet.
5. Chill and Serve:
- Refrigerate the bites for 15-20 minutes, or until the chocolate is fully set.
- Store the bites in an airtight container in the refrigerator for up to a week.
Notes
- Make It Fancy: Drizzle additional melted chocolate over the bites for a decorative touch.
- Nut-Free Version: Omit the almond for a coconut-only treat.
