Description

These Almond Joy Coconut Bites are a no-bake treat inspired by the classic Almond Joy candy bar. Featuring sweet coconut filling, crunchy almonds, and a rich chocolate coating, these bites are easy to make and perfect for satisfying your sweet tooth!

  • 2 cups sweetened shredded coconut
  • 1/2 cup sweetened condensed milk
  • 1/2 tsp vanilla extract
  • 1215 whole almonds
  • 1 1/2 cups semi-sweet or milk chocolate chips
  • 1 tbsp coconut oil (optional, for smoother chocolate coating)

Instructions

1. Prepare the Coconut Filling:

  1. In a mixing bowl, combine the shredded coconut, sweetened condensed milk, and vanilla extract. Mix well until the mixture is sticky and holds together.

2. Shape the Bites:

  1. Scoop about 1 tablespoon of the coconut mixture and roll it into a small ball or oval shape.
  2. Press a whole almond into the top of each coconut bite and gently reshape if needed.
  3. Place the bites on a parchment-lined baking sheet. Freeze for 20-30 minutes to firm up.

3. Melt the Chocolate:

  1. In a microwave-safe bowl, melt the chocolate chips and coconut oil (if using) in 20-second intervals, stirring after each, until smooth and fully melted. Alternatively, melt the chocolate in a double boiler.

4. Coat the Bites:

  1. Using a fork or dipping tool, dip each coconut bite into the melted chocolate, ensuring it’s fully coated.
  2. Gently tap off any excess chocolate and place the coated bite back onto the parchment-lined baking sheet.

5. Chill and Serve:

  1. Refrigerate the bites for 15-20 minutes, or until the chocolate is fully set.
  2. Store the bites in an airtight container in the refrigerator for up to a week.

Notes

  • Make It Fancy: Drizzle additional melted chocolate over the bites for a decorative touch.
  • Nut-Free Version: Omit the almond for a coconut-only treat.
