- 1 cup light brown sugar, packed
- 1 cup granulated sugar
- 1 cup vegetable oil
- 4 large eggs
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1 1/2 cups chopped pecans
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper for easy removal.
- In a large mixing bowl, combine the brown sugar, granulated sugar, and vegetable oil. Mix well until smooth and combined.
- Add the eggs one at a time, beating well after each addition until fully incorporated.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
- Stir in the vanilla extract and chopped pecans until evenly distributed throughout the batter.
- Pour the batter into the prepared baking dish, spreading it evenly.
- Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean and the edges are golden brown.
- Let the pecanbread cool completely in the pan before cutting into squares. Serve and enjoy!
Notes
- For a little extra flavor, try adding 1/2 teaspoon of cinnamon to the batter.
- You can store Alabama Pecanbread in an airtight container at room temperature for up to 3 days, or refrigerate it for up to a week.
