Description

Aji Verde is a creamy, spicy Peruvian green sauce made with cilantro, jalapeños, and cheese. It’s bold, fresh, and perfect for grilled meats, roasted veggies, or as a dipping sauce. Once you try it, you’ll want to drizzle it on everything!


Ingredients

  • 1 cup fresh cilantro leaves (packed)

  • 2 jalapeño peppers, stemmed (seeds removed for less heat)

  • 1 clove garlic

  • 1/2 cup mayonnaise

  • 1/4 cup crumbled queso fresco or grated Parmesan cheese

  • 2 tablespoons fresh lime juice

  • 1 tablespoon olive oil

  • 1/4 teaspoon salt


Instructions

  1. Add all ingredients to a blender or food processor.

  2. Blend until smooth and creamy. Scrape down the sides as needed.

  3. Taste and adjust salt or lime juice if needed.

  4. Serve immediately or refrigerate in a sealed container for up to 1 week.


Notes

  • For a spicier sauce, leave the seeds in the jalapeños.

  • Swap mayo for Greek yogurt if you prefer a tangier flavor.

  • Queso fresco gives it an authentic Peruvian touch, but Parmesan works great too.
