Aji Verde is a creamy, spicy Peruvian green sauce made with cilantro, jalapeños, and cheese. It’s bold, fresh, and perfect for grilled meats, roasted veggies, or as a dipping sauce. Once you try it, you’ll want to drizzle it on everything!
Ingredients

1 cup fresh cilantro leaves (packed)

2 jalapeño peppers, stemmed (seeds removed for less heat)

1 clove garlic

1/2 cup mayonnaise

1/4 cup crumbled queso fresco or grated Parmesan cheese

2 tablespoons fresh lime juice

1 tablespoon olive oil

1/4 teaspoon salt
Instructions

Add all ingredients to a blender or food processor.

Blend until smooth and creamy. Scrape down the sides as needed.

Taste and adjust salt or lime juice if needed.

Serve immediately or refrigerate in a sealed container for up to 1 week.
Notes

For a spicier sauce, leave the seeds in the jalapeños.

Swap mayo for Greek yogurt if you prefer a tangier flavor.

Queso fresco gives it an authentic Peruvian touch, but Parmesan works great too.
