Description

Crispy on the outside and tender on the inside, these Air Fryer Zucchini Fries are a healthy and delicious alternative to traditional fries—perfect as a snack, appetizer, or side dish.


Ingredients

  • 2 medium zucchinis, cut into fry-sized sticks
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. Preheat air fryer to 400°F (200°C).
  2. Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with a mixture of panko, Parmesan, garlic powder, Italian seasoning, salt, and pepper.
  3. Coat each zucchini stick first in flour, then egg, then breadcrumb mixture, pressing to adhere.
  4. Place zucchini fries in a single layer in the air fryer basket. Lightly spray with cooking spray.
  5. Air fry for 8–10 minutes, flipping halfway through, until golden and crispy.
  6. Serve warm with marinara sauce, ranch dressing, or garlic aioli.

Notes

  • Substitute almond flour and gluten-free breadcrumbs for a gluten-free version.
  • Spice it up with a pinch of cayenne or smoked paprika in the breadcrumb mix.
  • Great way to use up garden zucchini in the summer.
