Crispy on the outside and tender on the inside, these Air Fryer Zucchini Fries are a healthy and delicious alternative to traditional fries—perfect as a snack, appetizer, or side dish.

- 2 medium zucchinis, cut into fry-sized sticks
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- Salt and pepper to taste
- Cooking spray
Instructions
- Preheat air fryer to 400°F (200°C).
- Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with a mixture of panko, Parmesan, garlic powder, Italian seasoning, salt, and pepper.
- Coat each zucchini stick first in flour, then egg, then breadcrumb mixture, pressing to adhere.
- Place zucchini fries in a single layer in the air fryer basket. Lightly spray with cooking spray.
- Air fry for 8–10 minutes, flipping halfway through, until golden and crispy.
- Serve warm with marinara sauce, ranch dressing, or garlic aioli.
Notes
- Substitute almond flour and gluten-free breadcrumbs for a gluten-free version.
- Spice it up with a pinch of cayenne or smoked paprika in the breadcrumb mix.
- Great way to use up garden zucchini in the summer.
