Air Fryer Stuffed Peppers are a quick and delicious way to enjoy a classic dish. Bell peppers are filled with a flavorful mixture of ground meat, rice, and seasonings, then cooked to perfection in the air fryer. A cheesy topping adds the perfect finishing touch!

- For the Stuffed Peppers:
- 4 medium bell peppers (any color)
- 1 pound ground beef, turkey, or chicken
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 cup cooked rice (white, brown, or cauliflower rice)
- 1 cup diced tomatoes (canned or fresh)
- 1/2 cup tomato sauce (plus extra for serving)
- 1 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- For the Topping:
- 1 cup shredded cheese (cheddar, mozzarella, or a blend)
- Fresh parsley or basil, chopped (optional, for garnish)
Instructions
- Prepare the Bell Peppers:
- Cut the tops off the bell peppers and remove the seeds and membranes. If needed, trim the bottoms slightly so they stand upright. Set aside.
- Make the Filling:
- Heat a skillet over medium heat. Cook the ground meat until browned, breaking it up with a spoon. Add the onion and garlic and sauté until softened, about 3 minutes.
- Stir in the cooked rice, diced tomatoes, tomato sauce, Italian seasoning, paprika, salt, and black pepper. Cook for 2–3 minutes until well combined and heated through.
- Stuff the Peppers:
- Spoon the filling into each bell pepper, packing it lightly.
- Cook in the Air Fryer:
- Preheat the air fryer to 360°F (180°C). Place the stuffed peppers upright in the air fryer basket. Cook for 10 minutes.
- Carefully sprinkle the shredded cheese on top of each pepper. Cook for an additional 3–5 minutes, or until the cheese is melted and bubbly.
- Serve:
- Garnish with fresh parsley or basil, if desired. Serve with extra tomato sauce on the side.
Notes
- For extra flavor, use seasoned ground sausage or add chopped fresh herbs to the filling.
- Substitute quinoa or orzo for the rice if preferred.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer or microwave.
