For the Filling:
- 1 cup fresh or frozen blueberries
- 2 tablespoons granulated sugar
- 1 teaspoon cornstarch
- 1 teaspoon lemon juice
- 1/2 teaspoon vanilla extract

For the Chimichangas:
- 4 small flour tortillas
- 4 ounces cream cheese, softened
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon butter, melted
For Topping (Optional):
- 1/4 cup granulated sugar + 1 teaspoon cinnamon (for coating)
- Powdered sugar (for dusting)
- Whipped cream or vanilla ice cream (for serving)
Instructions
1. Prepare the Blueberry Filling:
- In a small saucepan over medium heat, combine blueberries, sugar, cornstarch, lemon juice, vanilla extract, and cinnamon.
- Stir and cook for 3-5 minutes, until the blueberries burst and the mixture thickens. Remove from heat and let cool.
2. Assemble the Chimichangas:
- In a small bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth.
- Spread about 1 tablespoon of the cream cheese mixture onto each tortilla.
- Spoon 2-3 tablespoons of blueberry filling onto the lower half of the tortilla.
- Fold in the sides and roll tightly, like a burrito. Brush the seam with melted butter to help seal.
3. Air Fry the Chimichangas:
- Preheat the air fryer to 375°F (190°C).
- Brush each chimichanga with melted butter and place them seam-side down in the air fryer basket.
- Air fry for 6-8 minutes, flipping halfway, until golden brown and crispy.
4. Add Toppings & Serve:
- Roll warm chimichangas in cinnamon sugar or dust with powdered sugar.
- Serve with whipped cream or ice cream and enjoy!
Notes
- Make it fruity: Swap blueberries for strawberries, apples, or mixed berries.
- No air fryer? Bake at 375°F (190°C) for 15 minutes, flipping halfway.
- Extra crunch: Sprinkle crushed graham crackers inside for texture.
- Storage: Best enjoyed fresh, but you can store leftovers in the fridge and reheat in the air fryer for 2-3 minutes.
